On a rainy October day in 2002, singer Jessica Simpson married fellow musician Nick Lachey in Austin, Texas. Their fairytale wedding came together with the help of celebrity wedding planner Mindy Weiss who created the soft romantic wedding.  The beautiful candlelit took place at the Smith Family Chapel in front of 350 misty-eyed guests.  In attendance were celebrities such as Jessica’s sister, Ashlee Simpson, and Nick Lachey’s former 98 Degrees band members, Drew Lachey and Justin Jeffries.  The church was filled with thousands of pale pink roses, a dream of Jessica Simpson’s since she was a little girl, which perfectly complemented the candles’ warm glow. Jessica Simpson and Nick Lachey carried this dramatic and inviting ambience into the reception site, the Barton Creek Resort & Spa, where 30,000 more roses filled the ballroom.  Each of the reception tables for this celebrity wedding were decorated differently but all featuring roses, candles and eclectic vases, which created various points of interest for throughout the room.  Personalized dinner menus were awaiting each guest.  The 5-tier wedding cake, featuring hundreds of handmade, edible flowers, truly stole the show, however.  The cake was made of vanilla butter cream frosting and layers of red velvet cake, a southern favorite of Jessica Simpson’s.  Guests danced the night away and the evening ended with the celebrity couple driving off in style—their getaway car: a 1937 Cadillac limousine.
